Cara sederhana membuat JAM and JELLY

Jam dan jelly adalah produk buah-buahan yang mungkin tidak asing lagi bagi kita. Keduanya merupakan teman makan roti yang lezat untuk sarapan pagi. Tetapi umumnya jam dan jelly yang kita kenal masih harus diperoleh dari Supermaket atau pasar Swalayan dengan harga yang relatif mahal.


   Sebenarnya kita dapat membuat sendiri kedua produk tersebut dengan biaya yang murah dan cara yang mudah. Juga alat-alat yang digunakan sangat sederhana karena hanya perlu kompor dan beberapa alat dapur yang biasa digunakan sehari-hari. Tetapi hasil yang diperoleh tidak kalah mutunya dengan yang ada di pasaran (bahkan kadang-kadang lebih baik).

   Jam dan jelly adalah makanan setengah padat yang terbuat dari buah-buahan dan gula dengan kandungan total padatan minimal 65 persen. Komposisi bahan mentahnya ialah 45 bagian buah dan 55 bagian gula. Jam dibuat dari hancuran buah-buahan sedangkan jelly dari sari buahnya. Syarat jam dan jelly yang baik ialah transparan, mudah dioleskan dan mempunyai aroma dan rasa buah asli.



   Pada prinsipnya hampir semua jenis buah-buahan dapat dibuat jam dan jelly, terutama buah yang mengandung pektin. Pektin adalah senyawa polisakarida yang berguna untuk membentuk gel dengan gula pada suasana asam. Buah-buahan yang umum dibuat jam dan jelly antara lain nenas, jambu biji, pepaya, sirsak, apel, strawberry dan lain-lain.

   Untuk mendapatkan sumber pektin digunakan buah yang tua tetapi belum masak, sedangkan untuk mendapatkan cita rasa (aroma dan rasa) buah dipakai buah yang sudah masak. Karena dikehendaki dua-duanya (pektin dan cita rasa), maka untuk membuat jam dan jelly yang baik digunakan campuran buah tua (tapi belum masak) dan buah masak dengan perbandingan 1 : 1. yang perlu diperhatikan adalah perbandingan campuran hancuran buah dan gula yaitu 45 : 55.


Pembuatan Jam

Untuk membuat jam, kita hanya perlu menyediakan buah tua dan buah masak (dapat satu jenis buah maupun campuran, misalnya nenas dan pepaya) dan gula pasir secukupnya. Formula yang digunakan sebaiknya mempunyai perbandingan buah : gula = 45 : 55. Misalnya jika campuran antara buah tua dan buah masak 450 gram (masing-masing 225 gram), maka gula pasir yang dipakai adalah 550 gram. Hal yang sama berlaku untuk membuat dalam jumlah yang lebih banyak.

Dalam pembuatannya, buah mula-mula dihancurkan dengan cara diparut memakai parutan kelapa atau dihancurkan dengan blender, lalu dimasukkan ke dalam wajan atau penggorengan. Masukkan gula pasir dalam perbandingan yang benar, kemudian masak di atas kompor sambil diaduk sampai terbentuk jam, yaitu bila dituangkan atau dijatuhkan dari atas jatuhnya terputus-putus (tidak mengucur).



Pembuatan Jelly

Bahan dan alat untuk pembuatan jelly sama dengan jam, hanya yang digunakan adalah sari buahnya. Sari buah dibuat dengan cara sebagai berikut : Buah dipotong-potong kecil, lalu direbus selama 5 – 10 menit. Setelah itu dihancurkan dengan blender, lalu disaring menggunakan kain saring (blacu) atau saringan the. Cairan yang diperoleh dibiarkan selama 1 jam sampai semua kotoran mengendap, sehingga diperoleh sari buah yang bening.

Untuk membuat jelly, masukkan sebanyak 450 gram sari buah ke dalam wajan (penggorengan), ditambah 550 gram gula pasir dan dimasak sampai kental dan matang. Tanda kematangan sama dengan jam, yaitu bila dituangkan jatuhnya terputus-putus dan tercium aroma buah yang khas.

   Nah, demikianlah cara sederhana untuk membuat jam dan jelly. Hasil yang diperoleh dapat disimpan dalam toples dan tahan selama 1 bulan atau lebih. Tetapi, tentu saja harus dijaga dari serbuan semut-semut yang nakal.
